This cabbage salad can be thrown together for an easy and tasty dinner.


Ingredients (serves 2)

  • 250g Bacon
  • 1 small Onion
  • half a large cabbage shredded coarsely
  • 2 tablespoons butter
  • 1 teaspoon curry powder
  • Handful cashews
  • pinch of salt
  • pinch of pepper
  • sprinkle of garlic salt

Method

  1. In a large fry-pan lightly fry bacon and onion in butter until the onion is soft and bacon lightly cooked.
  2. Add salt, pepper, garlic salt and curry powder then cabbage and stir fry for 5-8 mins on low.
  3. Add cashews and serve.

Notes

Something different - add raisins for a burst of good flavour if you like.

  • I love this method of cooking cabbage. I use the same recipe, but haven’t tried cashews with it. I think they would add a wonderful bit of texture and flavour
