Ingredients

  • 1 bowl kale
  • 1 nectarine sliced
  • half cup corn
  • 1 cup baby rocket
  • half cup dried cranberries
  • half Lebanese cucumber sliced
  • Paul Newman’s Own Classic Vinaigrette

Method

  1. Fill your bowl with kale and baby rocket.
  2. Slice a nectarine and add this on top.
  3. Add your corn and dried cranberries.
  4. Slice your Lebanese cucumber in half circles, and add this on top.
  5. Finish with Paul Newmans Own Classic Vinaigrette. Mix together and serve.

  • This Kale, Nectarine, Cranberry and Corn Salad looks incredibly vibrant and refreshing! I would leave out the kale but love the combination of the juicy orange nectarines, with the pops of red from the cranberries and the bright yellow kernels of corn. It’s a salad that looks as appealing as it is likely to be delicious

  • Oooh this sounds really delicious. Light, healthy and super tasty. A perfect side to any number of options or even great as a lighter option on its own. I really love incorporating summer fruits into my salads. So fresh and tasty and the kids live the added sweetness as well 🙂

  • A very easy and simple salad to make, but personally I would leave out the kale. I know this ingredient is supposed to be extra good for everyone, but I truly cannot stand the taste and since there is rocket already in the salad mix I would probably have some Cos lettuce to make it look similar in the green department.

  • I love a nice fresh salad daily not only during summer but the whole year through.
    This is a lovely combination of ingredients. Kale is such great veggie and you can prepare it in so many ways. I’m 61 yrs old and growing up in the Netherlands I ate kale pretty much my whole life

  • This salad looks very colourful and vibrant and perfect for summer dinners. I love all the ingredients in this recipe, it looks simple and easy to make too. A great salad option for those summer bbq’s with friends or family. Cucumber in summer is so delicious and juicy and it is something i eat a lot of.

  • I really do like to make fresh, colourful and crisp salad dishes for the warmer months of the year and for times when eating outside. The list of ingredients for this salad does indeed sound yummy and this salad would go well when paired with some freshly cooked fish or chicken.

  • This sounds like a delicious combo! I absolutely love adding peaches, strawberries or watermelon to summer salads (depending on the dressing). It’s such a fun time of year for produce


    • I totally agree with your comment about enjoying seasonal produce; I love this time of the year for finding, buying and eating an abundance of local and fresh fruit and also vegetables. Fresh seasonal fruit is so good to have on offer at Christmas time and during the Summer holidays.
