Ingredients (makes 30 Labneh balls)

  • 1 kg Natural yoghurt
  • 1 tsp Salt
  • Flavourings of your choice: Chilli, peppercorns, fresh thyme, fresh rosemary, paprika.

Method

  1. Mix together the yoghurt and salt. Add to a nut milk bag or a clean Muslin cloth.
  2. Put it on a strainer over a bowl to catch the whey liquid. Leave for 24-48 hours.
  3. Roll the strained yoghurt into small balls and place into sterilised jars half filled with olive oil. Once you've put in your yoghurt balls you can top up with olive oil and add other flavourings to your taste. Examples are: Chilli, peppercorns, fresh thyme, fresh rosemary or paprika.

Notes

You can use the whey in your morning smoothie.
