The freshness of the yogurt is a nice and crisp flavour!


Ingredients (serves 2)

  • 2 tsp ground cumin
  • 2tsp ground coriander
  • 2tsp smoked paprika
  • 2 tblsp olive oil
  • 6 Lamb cutlets
  • 1 Cup Australian Greek style yogurt
  • 2 tsp Crushed Garlic
  • 1 salt and pepper to taste

Method

  1. Combine cumin, coriander, smoked paprika and oil in a bowl, rub lamb with this mix then grill until cooked, rest for at least 5 minutes before serving
  2. Combine yogurt and garlic in a small bowl seasoning with pepper
  3. Serve with fresh salad

Notes

This is a little Moroccan in influence, perfect for the BBQ!

  • Cumin and coriander are 2 main spices in Dukkah ! I make dukkah all the time. I sometimes rub the meat with that. I’m a vegetarian myself, but my husband says it’s very tasty !
