Easy No Bake Lemon and Mixed Berries Individual Cheesecakes
Serves at least 6 depending on what size glasses you use.
Ingredients (serves 6)
- 8 Butternut Snap Biscuits
- 50 grams Butter
- 1 packet Mixed Berries
- 1 tub Lemon Curd
- 250 grams Creme Fraiche
- 1 tablespoon Icing sugar
- 1 teaspoon Vanilla extract
- 1 tablespoon Milk
- Milk chocolate
- 1 Lemon
Method
- Crush the Butternut snap biscuits, and grate some lemon zest. Melt the butter in a fry pan. Once melted turn off the heat and add the biscuits and lemon zest. Mix well and put aside.
- Put the creme fraiche in a bowl, add the vanilla extract, milk and icing sugar. Stir until all combined well and has a really smooth texture. Add more milk if you need to.
- Get a nice glass, put the biscuit mix at the bottom. Put a nice heaped teaspoon of the lemon curd followed by a few mixed berries, then the creme fraiche mix on top. Optional if you would like to put a few more berries on top. Finish with grated chocolate
