A versatile frosting which is great on most cakes and cupcakes.
Ingredients (makes 12 Thick cupcake toppings)
- 250 grams Cream cheese
- 2/3 cup Icing sugar
- 2 Lemons (juice only)
- 1/3 cup Sour cream
Method
- Put the cream cheese and icing sugar in a bowl and beat until combined. I find this helps to avoid lumps.
- Add the lemon juice and sour cream. Beat on high for around two minutes.
- The frosting should look light and fluffy.
Notes
I find the sour cream stops the frosting going hard. You could also add finely grated lemon rind for a stronger lemon flavour too.
