Healthy, fresh and delicious, I love this quick dish as it always satisfies
Ingredients (serves 4)
- 4 Chicken breast fillets
- 1/4 Cup Chopped fresh rosemary
- 2 cloves Garlic chopped finely
- 2 Large lemons 1 for the zest (whole lemon) & juice (1 1/2 TBS), one for wedges to serve
- Good olive oil
- Salt & pepper
Method
- Mix the chopped rosemary, garlic, lemon zest, lemon juice, salt, pepper and enough olive oil together in a small bowl to make a paste.
- Marinade for at least an hour, or up to two hours if desired
- Grill chicken until cooked through, either on frypan or for more intense flavour, on a BBQ grill or webber grill
- Serve with fresh lemon wedges to squeeze over the top
Notes
This is also nice in a wrap or cold the next day
