Serve as a light dessert by itself, or delicious with sliced bananas


Ingredients (serves 4)

  • 1/3 Cup Lemon Juice
  • 1 Cup Castor Sugar
  • 1 Cup Milk
  • 1/2 Pints Cream - whipped

Method

  1. Combine lemon and sugar in a saucepan, stir over low heat until the sugar fully dissolves, then bring to the boil
  2. Remove from heat and allow to cool a little, then gradually add the milk. Pour into freezer trays and freeze.
  3. Once frozen, mash with a fork, and fold in whipped cream. Retunr to freezer until firm.

  • This sounds really refreshing and perfect in summer for those dinner parties.
