Scones have a long history as a beloved tea-time snack, but I’ll bet the original creators never imagined using lemonade to fluff them up! This great lemonade scones recipe proves airy scones are super easy to make, and will be enjoyed by kids and adults alike.
For hundreds of years, scones have been a simply made baked good savoured by rich and poor. We’re most used to the sweet variety, but savoury scones are pretty popular! These are made with more savoury cheese, cream, and even shredded meat bits… Arguably, these treats are best served with a dollop of cream and some fresh jam or preserve whilst sitting in a garden, reading a book or having a cuppa – preferably all three at once! Sometimes I like to just eat them plain and enjoy the damper-like taste. Using lemonade like in this lemonade scones recipe gives the dough a bit more sweetness and a hint of lemony zest that improves them a great deal!
It’s so much fun to bake scones as a kid (and even as an adult). But when you pull those steaming petrified rocks out of the oven your heart sinks. All that work for some dense and unenjoyable scones! Amazingly, lemonade and its carbonated fizz helps fluff up your dough and aerate the scones. There are in fact many recipes floating around the internet that use lemonade as a form of baking powder to fluff up cakes, cupcakes, muffins and more! There’s even a cake mix I’ve used in one of the main supermarkets that has ‘just add lemonade!’ on the front cover.
Ingredients (serves 4 | makes 15 scones)
- 3 cups Wholemeal Flour
- 1 cup Cream
- 1 cup Lemonade
- Pinch Salt
- Splash Milk
Method
- Preheat oven to 220 degrees (fan forced). Sift flour best you can, add salt.
- Add cream and lemonade and mix ingredients together until just combined, being sure not to over mix. You may want to use a knife for this step.
- Place onto a lightly floured board and knead. Be sure not to overwork the dough.
- Roll out with rolling pin to 1 inch thick. Cut out scones using a round scone cutter or tumbler. Place on tray lined with baking paper making sure to leave space in between scones as they will rise and spread out a bit. Brush tops with milk.
- Reduce oven to 200 degrees and cook for 10 - 12 minutes or until golden.
- Serve with butter, jams and cream and ENJOY! Best served hot.
