Ingredients (makes 16 )

  • 4 scoops Protein powder
  • 1/2 C Almond meal/flour
  • 2tsp baking powder
  • 2tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp allspice
  • 3 egg whites
  • 1/4 C Stevia
  • 1/2C fat free cottage cheese
  • 1 tsp Vanilla essence
  • 1 Apple or I use a small handful of mixed fruit

Method

  1. Spray an 8x8 inch dish with non stick spray, preheat oven to 200. In a large bowl combine protein powder, cinnamon,nutmeg, allspice and baking powder.. whisk together and set aside
  2. In a smaller bowl combine egg whites, stevia, cottage cheese and vanilla.. whisk until well combined and then add the wet ingredients to the dry ingredients.. mix well
  3. Pour batter into prepared dish and bake for 20-25 mins

  • loved and shared. i would definately add some mixed nuts to this just as you have suggested. they look good in that photo and it would add that extra little bit of flavour. this is a great recipe and i can’t wait to try it. Also will try to chuck some into the kid’s lunchbox
