Full of citrus, very yummy, gluten free, dairy free.


Ingredients (makes 1 22cm cake)

  • 3 mandarins
  • 1 cup coconut sugar
  • 6 eggs
  • 2 cups almond meal

Method

  1. Place whole unpeeled mandarins, in a saucepan and cover with water, bring to the boil then simmer for 1 hour. Allow to cool completely then pull them apart and remove any pips. Then puree the mandarins including the peel
  2. Beat eggs and sugar until thick and glossy, then add mandarins puree and almond meal and stir well
  3. Pour into a 22 cm, paper lined cake tin and bake in a preheated oven at 160C for 60mins. Turn onto a wire rack and allow to cool. Either ice or serve plain.

Notes

This cake is full of flavour which is why I didn't ice it. Mandarins can be replaced with oranges or lemons. I also made a few little cupcakes for my toddler and she loved it.
