Little preparation for a big flavoured meal
Ingredients (serves 4)
- 1 tablespoon oil
- 6 Ingham's chicken drumsticks
- 5 med potatoes, peeled and chopped into quaters
- 3-4 med tomatoes, chopped
- 1/2 cup pitted kalamata olives
- 2 garlic cloves, sliced thinly
- 2 sprigs fresh rosemary
- 1/2 cup dry white wine
- salt and pepper
Method
- Preheat oven to 200 degrees C
- Heat oil in pan, add the chicken and cook turning occasionally, for 5 minutes or until browned. Transfer to a plate and cover with foil to keep warm
- Add potato to the pan and a little more oil, and cook , turning a few times, until golden . Remove from heat
- Place potatoes and chicken into an oven proof dish. Top with tomatoes, olives,and garlic. Sprinkle with Rosemary and pour over the wine.
- Season with salt and pepper. Bake for 40 minutes until chicken is cooked through and potatoes are soft
- Serve with beans and carrot or vegies of your choice
