Little preparation for a big flavoured meal


Ingredients (serves 4)

  • 1 tablespoon oil
  • 6 Ingham's chicken drumsticks
  • 5 med potatoes, peeled and chopped into quaters
  • 3-4 med tomatoes, chopped
  • 1/2 cup pitted kalamata olives
  • 2 garlic cloves, sliced thinly
  • 2 sprigs fresh rosemary
  • 1/2 cup dry white wine
  • salt and pepper

Method

  1. Preheat oven to 200 degrees C
  2. Heat oil in pan, add the chicken and cook turning occasionally, for 5 minutes or until browned. Transfer to a plate and cover with foil to keep warm
  3. Add potato to the pan and a little more oil, and cook , turning a few times, until golden . Remove from heat
  4. Place potatoes and chicken into an oven proof dish. Top with tomatoes, olives,and garlic. Sprinkle with Rosemary and pour over the wine.
  5. Season with salt and pepper. Bake for 40 minutes until chicken is cooked through and potatoes are soft
  6. Serve with beans and carrot or vegies of your choice

  • I love Mediterranean and Mediterranean style food – thanks for your bake recipe. I always add extra olives to all of these types of recipes and also have some olives on the side for snacking. Love olives!
