A quick & easy way to prepare a tasty couscous dish.
Ingredients (serves 2)
- 2 cups Couscous
- 3 Spring onions
- 1 cup Sliced olives
- 1 cup Spinach leaves
- 5 slices Ham
- 2 cups Grated cheese
- 1 Tbsp Fresh basil
- 1 Tbsp Butter
Method
- Prepare couscous by adding boiled water and butter then mix with fork until light and fluffy.
- Pan fry ham, spring onions, spinach leaves and basil over medium heart until ham is cooked.
- Add to couscous and stir. Add salt and pepper if required.
Notes
You may like to add, sun/semi dried tomatoes, zucchini, various herbs of choice and the cheese can be replaced with fetta if so desired.
