Quick & Easy Fish Parcels


Ingredients (serves 4)

  • 400g Mixed Beans
  • 1 punnet cherry tomatoes halvee
  • 1 leek cut into thin strips
  • 1/2 Cup sliced Olivies
  • 2 Tablespoons Parsley
  • 2 Tablespoons Capers
  • 2 Tablespoons Lemon Juice
  • 4 x 200g Fish Filletts
  • 2 Garlic Cloves sliced
  • Pepper to season

Method

  1. Preheat oven to 200C. Cut four 50cm lengths of baking paper. Combine the beans, tomato, leek, olive, parsley, capers, garlic and half the oil in a bowl. Season with pepper
  2. Divide the bean mixture among the sheets of paper. Top with the fish. Combine the lemon juice and remaining oil in a bowl. Drizzle over the fish. Season.
  3. Fold the 2 long sides of each sheet of paper over the filling to enclose. Tuck the short sides under to seal. Place on a baking tray. Bake for 15-20 minutes or until the fish flakes when tested with a fork.

  • Fish is my very favourite protein, and I’m always looking for different ways to serve it so that it’s healthy and full of flavour. Your recipe ticks all the boxes, and the only thing I’d change is probably adding a little chilli to the mix. Thank you so much for the recipe!
