Easy and delicious banana bread
Ingredients (serves 12)
- 3 Overipe bananas (Large)
- 1 T Lemon juice
- 120gm butter
- 1cup coconut sugar
- 2 t vanilla essence
- 2 eggs (whisked)
- 1 T Cinnamon
- 1 t salt
- 1 T Baking soda
- 2 cups Plain flour
- 1/2 cup Buttermilk
Method
- Preheat oven to 185C.
- In a medium bowl, mash bananas until creamy and stir in lemon juice. Set aside. In another bowl, whisk together flour,baking soda, cinnamon, and salt. Set aside.
- In a large bowl, cream together the butter and coconut sugar. Add in eggs and bananas.
- Add vanilla and buttermilk.
- Stir gently and make sure you don't over stir them otherwise they will be dry.
- Pour batter in a loaf pan and bake for 1 hour.
