Serve with fresh crusty bread
Ingredients (serves 6)
- 1 onion, chopped
- 3 Rashers trimmed bacon, chopped
- 1 carrot, chopped
- 1 stick celery, chopped
- 1 clove garlic, chopped
- 5 cups beef stock
- 1 can lightly crushed whole tomatoes
- 1/2 cup tomato puree
- 150 grams green beans, trimmed and cut into 4 cm lengths
- 1/4 cup risoni
- 400 gram can white beans, rinsed and drained
- 2 tablespoons chopped flat leaf parsley
Method
- Heat a large saucepan over medium heat. Add onion, bacon, carrot, celery and garlic and cook for 5 minutes or until browned
- Add stock, tomatoes and puree and simmer for 20 minutes or until vegetables are tender
- Add green beans and pasta and cook for 8 minutes or until pasta is cooked
- Stir through white beans and parsley and cook for 1 minute.
Notes
Tastes even better if you let it sit for a day.
