Sugar-free muffins with the goodness of bananas and coconut oil!
Ingredients (serves 12)
- 4 large eggs
- 1 cup Cacao powder
- 3 large overriped bananas
- 1 teaspoon baking powder
- 1/2 teaspoon Sea salt
- 1/4 cup Coconut oil
Method
- Blend all ingredients until well and creamy. Let stand for 15 minutes.
- Preheat oven to 180C.
- Fill each cupcake molds with 2/3 of the cake mix and bake for 25 minutes.
Notes
This muffin is very rich in cacao and bananas. They will rise during baking but come back down after cooling so you can fill the cupcake case all the way to the top before baking if you like for a bigger portion! :).
