How about a yummy healthy snack for mum to make!

Here is the mini pizza burger recipe! Yes!

Serves 4.

Ingredients

1 – packet Lebanese pocket bread

2 – Roast Carrot, Kale and Chickpea Burger ( Roast Pumpkin and Chickpea burger also suitable)

2 – Lebanese eggplants

1 – zucchini

Goats cheese or any good melting cheese of your choice

50 – grams sugo (tomato base)

Garlic and chilli optional

 

Instructions

Slightly grill bread base to crisp up.

Add small amount of sugo (1tbs).

Pan fry Roast Carrot, Kale and Chickpea Burger .

Lightly layer with grilled eggplant, chunks of Roast Carrot and Kale Burger, then add thin strips of ribboned zuchinni lightly marinated in olive oil chillie, and garlic.

Dot with goats cheese and shavings of parmesan and grill further until golden.

  • I’d probably have to change the toppings for my kids to eat it but it looks delicious to me! I LOVE eggplant! I’m always looking for new and different ways to make pizza. I love using puff pastry as a base too.

  • There are a few things I’ve never tried before, like kale, sugo and goats cheese, I suppose you never know if you like it unless you give it a go!!

  • Looks interesting but I think my family prefer my mini pizzas – par boiled pumpkin and sweet potatoe, feta cheese, olives, spinach leaves, tomato pizza paste and seeded mustard on the base and light mozzarella cheese on top. Bake in the oven and it tastes “yummy” according to my daughter and family friends.
