This cake is a moist desert cake that tastes even better the next day!
Ingredients (makes 1 23 cm cake)
- 220grams plain flour
- 1 1/2 Teaspoon Bi carb soda
- 2 eggs,beaten
- 1 1/2 cups sugar
- 425 grams Mango flesh , diced
Method
- Sift the flour and bi carb together
- In another bowl combine the eggs , sugar then mix in mango
- add the flour to the mango mixture and mix well
- Pour batter into a paper lined 23 cm cake tin
- Bake in a moderate oven 35-40 minutes or until a skewer comes out clean
Notes
No need for icing, just a sprinkle of icing sugar on top and serve with cream and a few slices of mango
