A quick and healthy dinner


Ingredients (serves 4)

  • 4 Firm fish fillets (I used ling fillets)
  • 1 Lemon, zest end
  • 1 tablespoon Paprika
  • 1 tablespoon Turmeric
  • 1 tablespoon Ground coriander
  • 1 Lebanese cucumber, grated
  • 1 handful Fresh mint
  • 1/2 cup Greek yogurt

Method

  1. Preheat Airfryer to 175 degrees. In a large bowl, mix lemon zest, paprika, turmeric and coriander.
  2. Coat fish fillets in spices, spray with oil and place in Airfryer basket. Cook for 6 minutes.
  3. While fish is cooking, mix cucumber, mint and yogurt in a bowl.
  4. Serve fish with tzatziki.

Notes

Serve with a herbed couscous and salad for a complete meal
