Ingredients (serves 12)

  • For filling: 2.5 cups Pumpkin puree
  • 1/2 cup cacao powder
  • 1/2 cup Buckinis or pumpkin seeds
  • 1/2 cup maple syrup
  • 2 T coconut oil
  • 2 T chia seeds
  • some cinnamon, nutmeg and salt
  • Crust: 10 Medjool dates
  • 1/4 cup cacao powder
  • 2 T coconut oil
  • 1/2 cup shredded coconut
  • 1/2 cup raw cashew or buckinis
  • 1/4t Seasalt

Method

  1. For crust, process all ingredients in a food processor and press in a dish or baking tray. Leave in fridge for an hour.
  2. For filling, blend all ingredients in a blender and pour on top of the crust you made an hour ago. Leave in fridge for at least 3 hours before serving

Notes

I can guarantee this will be the best pumpkin pie you will ever have! Sorry I am not a photographer- The pictures looked unappealing but they really taste yummy yummy yummooo!!!
