Ingredients (serves 12)
- For filling: 2.5 cups Pumpkin puree
- 1/2 cup cacao powder
- 1/2 cup Buckinis or pumpkin seeds
- 1/2 cup maple syrup
- 2 T coconut oil
- 2 T chia seeds
- some cinnamon, nutmeg and salt
- Crust: 10 Medjool dates
- 1/4 cup cacao powder
- 2 T coconut oil
- 1/2 cup shredded coconut
- 1/2 cup raw cashew or buckinis
- 1/4t Seasalt
Method
- For crust, process all ingredients in a food processor and press in a dish or baking tray. Leave in fridge for an hour.
- For filling, blend all ingredients in a blender and pour on top of the crust you made an hour ago. Leave in fridge for at least 3 hours before serving

I can guarantee this will be the best pumpkin pie you will ever have! Sorry I am not a photographer- The pictures looked unappealing but they really taste yummy yummy yummooo!!!
