Ingredients (makes 36 thins)

  • 150gm Soft Salted butter
  • 1/2cup Sugar
  • 1/2cup Self-raising flour
  • 1 small egg
  • 1 teaspoon Vanilla essence
  • 1/4 cup Rolled oats
  • 1 handful almond flakes

Method

  1. Cream all ingredients except for flour, oats and almond. Make sure it is well mixed and creamy.
  2. Add in flour and oats. Mix well. Pour batter in the center of baking paper. Spread batter to cover the entire baking sheet, making sure batter is spread evenly. Sprinkle almonds and press gently into dough.
  3. Bake each sheet about 12 minutes (180C), or until edges are lightly browned. Cut hot cookies into 2-inch squares. Return to oven and bake until lightly golden... about 5 minutes. Watch carefully to prevent over baking.

  • These Oaty Almond Thins look delicious. Great easy recipe.
