This One Pot Creamy Chorizo and Tomato Penne is an easy one pot indulgent weeknight dinner perfect for the Winter weather. You could also pan fry chorizo in a bit of oil beforehand if you prefer a crispier texture.
Ingredients (serves 4)
- 500g Penne
- 2 sliced chorizo sausages
- 410g Can chopped tomatoes
- 400g Can cherry tomatoes
- 3 garlic cloves
- 1 brown onion
- 3.5 cups Chicken stock
- 1 tbsp Dried basil
- 120g Baby spinach
- 1/4 cup Cream
- 1 Pinch Salt and pepper
- 1 Pinch Parmesan or tasty Cheese to serve
Method
- Place all ingredients except spinach, cream and basil in pot and bring ingredients to simmer stirring regularly.
- Cook for approximately 20 minutes or until pasta is cooked to your liking.
- Stir in spinach and basil for a few minutes. Season with salt and pepper. Stir through cream until warmed through and serve. Top with cheese if desired.
