The scones are crunchy on the outside with a soft and fluffy inside. Great warmed with butter.


Ingredients (makes 8 scones)

  • 2 cups self-raising flour
  • 1 cup skim milk
  • 1/4 cup low fat yoghurt
  • 1/4 cup light olive oil
  • 1 orange rind grated finely

Method

  1. Preheat oven to 220 degrees. Place all ingredients into a bowl and mix until well combined.
  2. Spoon a heaped spoonful of mixture on to the tray and space approx 3cm apart.
  3. Bake for 15 minutes or until golden and skewer comes out clean.

  • Wow, that’s something different – I’ve never had orange flavoured scones before!
    I’ve only had plain, sultana and blueberry. I’m very interested to try this as I love citrus flavoured things.

    • The orange is good for not having waste by using the rind.
