Ingredients (serves 12)
- 1/2 cup Coconut oil
- 6 Eggs
- 1/2 cup Honey
- 2 tsp Vanilla essence
- 1 pinch Seasalt
- 3/4 cup coconut flour
- 1/4 cup shredded coconut
- 1 Large banana (Mashed)
Method
- In a large bowl, whisk first 5 ingredients until well combined.
- Add in coconut flour and mix well with a spatula. Then add in bananas and shredded coconut. Mix well.
- Pour the batter in a prepared loaf pan and bake for 45 minutes under 185C.
- Make sure you wait for the cake to cool completely before cutting. Store remaining in fridge for up to 2 days.
