This recipe comes from the professional chefs at Relish Grill and Bar in the Crowne Plaza at Surfers Paradise. We believe in healthy, tasty food and wanted to share one of our many delicious recipes.
Ingredients (serves 2)
- 1/2 Brown Onion
- 1 clove Garlic
- 3 Anchovy Fillets
- 1 Tablespoon Parsley
- 10 ml Olive Oil
- 1/2 Lemon
- 1 Witlof
- 1 Tablespoon Capers
- 60g Arborio Rice
- 120ml Chicken Stock
- 50g Parmesan Cheese
- 20g Butter
Method
- Sauté onion in olive oil, add Arborio rice and cook until opaque. Add white wine, reduce, add stock. Cook until tender. Finish with shaved parmesan and stir frequently until cooked .
- Cut witlof in half and grill.
- Blend capers and anchovy. Add parsley, lemon juice and then olive oil. Emulsify ingredients.
- Pan Fry snapper fillet.
- Garnish with grilled lemon.
- Enjoy with loved ones.
