These parmesan and zucchini puffs are quick, easy and delicious! We used gluten free flour and they turned out great!


Ingredients (serves 4)

  • 2 zucchini grated
  • 1 tablespoon flour
  • 2 tablespoons parmesan
  • pinch salt and pepper
  • 1 egg
  • 2 tablespoons sour cream

Method

  1. mix the zucchini, flour, cheese, salt and pepper together
  2. Add the egg and sour cream and mix until well combined
  3. Spoon onto baking tray lined with baking paper
  4. Bake in oven on 180 degrees until golden

  • These look so delicious. In summer we grow zucchinis so would be nice to make when we have an abundance of zuchinis.

  • I made them. Really nice! They were just a little soft. Maybe I should have squeezed more the grated zucchini before mixing them with the other ingredients. Everybody loved them anyway! Thanks for the recipe!!! 🙂
