A guilt free dessert!

Ingredients (serves 6)

  • 60 ml tap water, hot
  • 3 tsp gelatin
  • 3 medium egg whites
  • 1/4 cup (55g) caster sugar
  • 500g no added sugar, low fat Passionfruit Yoghurt
  • 150g frozen raspberries
  • 1 medium fresh passionfruit pulp

Method

  1. Combine the water and gelatin in a small jug and stir until gelatin dissolves.
  2. Use electric mixer to beat the egg whites until soft peaks form. Gradually add the sugar, 1 tablespoon at a time, until thick and glossy.
  3. Whisk the gelatin mixture into the yoghurt. Gently fold the egg white mixture through the yoghurt mixture in two batches until just combined. Layer raspberries and spoonfuls of yoghurt mixture in 6 serving glasses. Cover and place the fridge for 2 hours or until set.
  4. Drizzle over passionfruit pulp to serve.

  • was reading and and thought, hmmm, this seems like it would be a great dessert when restricting calories, then I noticed it’s a Weight Watchers recipe. Love it, looks amazing if you’re watching your weight or not.

  • I’m not a pulp girl, but absolutely love the idea of this. I imagine I could decorate it with something else. Yum!

  • Personal I prefer unsweetened mousses. No added sugar low fat passion fruit yoghurt is often sweetened with artificial sweeteners, make sure not to use that when you want to give it to your kids.

  • Too many ingredients I don’t like…..the no added sugar, low fat Passionfruit Yoghurt contains sweeteners (one thing we all should ban) and the use of sugar is contains many dangers, especially refined sugars. Personally I don’t use gelatin as I’m a vegetarian, but that’s easy to be substituted by agar agar.

  • I have made this recipe before a few times, and it is really delicious. I usually use 2% fat passionfruit yoghurt mixed half and half with plain no-fat yoghurt, as the no-added sugar version almost always has artificial sweeteners, and I prefer additive free foods for me and my family.
Also very popular with the kids!

  • I love this as an idea but would probably replace the passionfruit. I’m not a fan of the pulp, but could see me using mango nector or similar instead.

  • Not sure if I would call it guilt free as it does contain 1/4 cup of sugar but must admit it looks wonderful in the pic.
