For a much more vibrant salad make the day before, and just toss lightly when ready to serve
Ingredients (serves 4)
- 4 Plum Tomatoes, seeded and finely chopped
- 1 White onion, finely chopped
- 1/2 Cup Coriander (or Basil)
- 2 Jalapeno peppers, seeded and finely chopped
- 1 Tablespoon Lime Juice
- Salt to taste
Method
- Combine all ingredients; cover and refrigerate for at least an hour.
Notes
This recipe screams summer to me- we used to have it with fresh sourdough at the beach
