I love this making these pikelets, the kids love them and it is a quick and easy way to add that extra serve of fruit into the day!
Ingredients (makes 20 pikelets ish)
- 1 egg
- 1/4 cup sugar
- 1 cup self raising flour
- 3/4 cup milk
Method
- Beat egg and sugar well
- Add flour
- Slowly add milk mixing as you go. You may need to add a little more milk depending on how you like your own pikelets.
- In a hot frying pan (with melted butter) poor tablespoon full of batter into pan. When covered in bubbles flip over and cook other side for a min or so. Serve with nutella, banana and strawberries :)
Notes
You can also use lactose free or soy milk if needed
