I love this making these pikelets, the kids love them and it is a quick and easy way to add that extra serve of fruit into the day!


Ingredients (makes 20 pikelets ish)

  • 1 egg
  • 1/4 cup sugar
  • 1 cup self raising flour
  • 3/4 cup milk

Method

  1. Beat egg and sugar well
  2. Add flour
  3. Slowly add milk mixing as you go. You may need to add a little more milk depending on how you like your own pikelets.
  4. In a hot frying pan (with melted butter) poor tablespoon full of batter into pan. When covered in bubbles flip over and cook other side for a min or so. Serve with nutella, banana and strawberries :)

Notes

You can also use lactose free or soy milk if needed

  • Pikelets are such fun to make and top; chocolate, bananas and strawberries are so good.


    • I love to top pikelets with all fruit that is in season; it gives balance to the treat.
