Perfect snack, dessert, treat or lunchbox filler!


Ingredients (serves 18 | makes 18 cupcakes)

  • 180g Melted Butter
  • 3 Eggs
  • 1 cup Caster sugar
  • 1 1/2 cups Self raising Flour
  • 1 1/2 cups Rasberries
  • 1 cup Desiccated coconut

Method

  1. Preheat oven 180c Line muffin tin with cupcake wrappers
  2. Add all ingredients to your bowl and mix together on low with electric mixer until combined. Beat on medium speed for a further 3 minutes. (If you like the texture of full berries mix all other ingredients with mixer and then fold in berries with a spatula or wooden spoon)
  3. Spoon mixture into cupcake liners and bake for 20 minutes.

  • These are super cute! My 5yo has told me she wants all the food at her next party to be pink so these will be perfect. I love raspberries so im guessing they will taste delicious as well. Might have to do a trial run or two just to check 😉
