Perfect snack, dessert, treat or lunchbox filler!
Ingredients (serves 18 | makes 18 cupcakes)
- 180g Melted Butter
- 3 Eggs
- 1 cup Caster sugar
- 1 1/2 cups Self raising Flour
- 1 1/2 cups Rasberries
- 1 cup Desiccated coconut
Method
- Preheat oven 180c Line muffin tin with cupcake wrappers
- Add all ingredients to your bowl and mix together on low with electric mixer until combined. Beat on medium speed for a further 3 minutes. (If you like the texture of full berries mix all other ingredients with mixer and then fold in berries with a spatula or wooden spoon)
- Spoon mixture into cupcake liners and bake for 20 minutes.
