These prawns and salad are a family fave that cooks in minutes and everyone loves! Every time I cook this, I have to share the recipe….. so Mums, here it is!
Ingredients (serves 4)
- GARLIC PRAWNS
- 1/4 cup olive oil
- 5 cloves crushed garlic
- 3 red chillies, chopped
- 700 grams green prawns (shelled)
- 50 grams butter
- bunch spring onions, chopped
- bunch parsley, chopped
- packet rocket
- 1 lemon, cut into wedges
- crusty bread
Method
- GARLIC PRAWNS: Cook the garlic and chilli in the oil, toss the prawns in and the butter too. Season with pepper and add the greens.
- Take the pan off the heat and pour onto a serving dish with lemon wedges around edges.
- GREEN SALAD: On a large platter scatter a packet of baby spinach leaves, toasted walnuts, avocado slices, chopped anchovies and dress with a caramelised balsamic. And, that is it! Quick easy and looks posh.
