Ingredients (serves 4)

  • 3 1/2 cups pulled pork
  • 10 mini flour tortillas
  • 1 ripe medium avocado
  • 1 tablespoon lime juice
  • 1/2 Iceberg lettuce, shredded
  • 200g grape tomatoes, quartered
  • 1/3 cup sour cream
  • tomato salsa
  • grated tasty cheese
  • coriander leaves
  • lime wedges

Method

  1. Heat a large non-stick frying pan over medium heat.
  2. Add pulled pork. Heat, stirring occasionally, for 4-5 minutes until hot.
  3. Meanwhile, warm tortillas following packet directions.
  4. Scoop avocado flesh into a bowl. Add lime juice. Season with salt and pepper. Mash using a fork.
  5. Evenly dividing ingredients, top tortillas with lettuce, pulled pork, tomatoes, avocado and sour cream.
  6. Drizzle with tomato salsa. Sprinkle with cheese. Scatter with coriander leaves and serve.

  • I absolutely love soft tacos, it is something i eat most weeks. Pulled pork is a great option to add as a meat option, it is so delicious and goes so well in wraps like these. I have made tacos similar to this many many times and they are always a hit.

  • I love Tacos and I love Pork so why not have both…right?
    These sound very yummy although I much prefer the crunchy taco shells. i think the crunchy texture just adds to the dining experience.
    Havent had Tacos in a while so might just have to indulge this week… yummo yes please
