These cookies are moist and very tasty. The recipe is very easy to make, the hardest part being preparing the pumpkin for cooking. Great for snacks, lunch-boxes and picnics.


Ingredients (makes 72 cookies)

  • 2 cups Raw Sugar
  • 2 cups Cooked Pumpkin
  • 1 cup Vegetable Oil
  • 2 teaspoons Vanilla Essence
  • 4 cups Self-Raising Flour
  • 1 teaspoon Salt
  • 1 teaspoon Ground Cinnamon
  • 1 teaspoon Ground Nutmeg
  • 1 teaspoon Ground Ginger
  • 2 cups Raisins (chopped)
  • 1 cups Walnuts (chopped)

Method

  1. In a large bowl, combine raw sugar, cooled soft pumpkin, vegetable oil & vanilla essence. Mix thoroughly.
  2. Sift together self-raising flour, salt and spices, and gradually fold into pumpkin mixture, ensuring all ingredients are well combined.
  3. Drop tablepoons of mixture on greased oven trays. Bake at 180 degrees C for 20 minutes until golden brown. Cool on wire rack.

Notes

For variety, you can use 1 cup chocolate chips and 1 cup raisins. Pecan nuts or pistachios are also nice to use instead of walnuts.

  • I love cakes or biscuits that include hidden veggies. It just makes me feel a little less guilty giving them to the kids ???? These have some great flavours in them as well. Very keen to give them a go and try out a couple of the flavour suggestions. Yum! :)
