These cookies are moist and very tasty. The recipe is very easy to make, the hardest part being preparing the pumpkin for cooking. Great for snacks, lunch-boxes and picnics.
Ingredients (makes 72 cookies)
- 2 cups Raw Sugar
- 2 cups Cooked Pumpkin
- 1 cup Vegetable Oil
- 2 teaspoons Vanilla Essence
- 4 cups Self-Raising Flour
- 1 teaspoon Salt
- 1 teaspoon Ground Cinnamon
- 1 teaspoon Ground Nutmeg
- 1 teaspoon Ground Ginger
- 2 cups Raisins (chopped)
- 1 cups Walnuts (chopped)
Method
- In a large bowl, combine raw sugar, cooled soft pumpkin, vegetable oil & vanilla essence. Mix thoroughly.
- Sift together self-raising flour, salt and spices, and gradually fold into pumpkin mixture, ensuring all ingredients are well combined.
- Drop tablepoons of mixture on greased oven trays. Bake at 180 degrees C for 20 minutes until golden brown. Cool on wire rack.
Notes
For variety, you can use 1 cup chocolate chips and 1 cup raisins. Pecan nuts or pistachios are also nice to use instead of walnuts.
