A recipe passed to me by an Italian friend and that I’ve being using for a lot of years. Everybody loves it!


Ingredients (serves 8)

  • 200 g ricotta
  • 100 g white spelt flour
  • 100 g wholemeal spelt flour
  • 150 g brown sugar
  • 2 Tbsp Caster Sugar
  • 100 g raisins
  • handful pinenuts
  • 1 tsp baking powder
  • 3 apples, diced
  • 150 ml rice oil
  • 2 eggs

Method

  1. Preheat oven at 180 degrees.
  2. In a bowl mix the dry ingredients: flours, sugar, baking powder.
  3. In another bowl mix the wet ingredients: oil, eggs, ricotta.
  4. Mix the 2 bowls together, add apples and raisins. Pour into an oven dish (lined with baking paper) and sprinkle the cake with the caster sugar and the pine nuts. Bake in the oven for 45-50 minutes.

  • This cake is probably one of the most unique cake recipes I have seen in a while and I’d love to try it. I have had ricotta cake before in an Italian deli and it was super tasty, I like the Italian cakes seem to be less sickly sweet than those traditional to me. Not sure about the pine nuts though but I’d give it a go

  • I often make a carrot cake as an alternative to a chocolate (or similar) cake for birthdays. I’m going to give this one a try next time.
