Simple and easy salmon curry soup.
Ingredients (serves 6)
- 400 gr Salmon
- 200 gr Rice Noodles
- 1/3 cup Thai red curry paste
- 270 ml Fresh Milk
- 4 cup Chicken stock
- 200 gr Mushroom, sliced
- 200 gr Snow peas
Method
- Place noodles into a large bowl and cover with boiling water. Set aside for 10 minutes.
- Combine curry paste, fresh milk and chicken stock in a saucepan. Bring to boil. Reduce heat to simmer.
- Add mushroom, salmon and snow peas to soup. Continue simmer about 5 minutes. Drain noodles and put in a serving bowl. Pour over soup and garnish with coriander.
