Easy way to add a vegetarian dish into the weekly menu without the kids cracking up, you can also add vegetables such as green beans and potato too if you like!


Ingredients (serves 5)

  • 2 cups Split red lentil
  • 2tbs Olive or coconut oil
  • 1tbs Black mustard seeds
  • 6 Dried curry leaves
  • 1tbs Freshly ground turmeric
  • 1 Large brown onion
  • 1 Sprig of coriander leaves to dress
  • 1tsp Garam masala
  • 1tsp Ground ginger
  • 1 Tin (270ml) coconut cream

Method

  1. Wash lentils then boil them in 4 cups of water, reduce heat and simmer until soft (aprox 15 min)
  2. Add oil and mustard seeds to a pan and fry until seeds begin to pop, add diced onion, curry leaves and spices, fry until onion is transparent and soft.
  3. Add your onion and spice mix to the saucepan with the coconut cream, stir over a low heat until all ingredients are combined to your desired consistency, add water if needed. Season with salt and pepper and serve with coriander leaves!

Notes

Experiment with different flavoured and spices, everyone likes this a slightly different way in our house! It's also a good excuse for papadams!

  • This sounds very traditional and rather healthy. I do suspect it might be a bit spicy for me (because I’m a total wimp) but others in my family would really enjoy it. I like to have some vegetarian meals in the rotation, so I’ll be very willing to try this and see.
