We love these quick, easy and tasty chicken parmigiana rissoles. They are bite sized little mouthfuls and have a lovely texture and flavour.
Ingredients (serves 4)
- 500 g chicken mince
- 1 egg
- 1 onion, finely chopped
- 1 tsp mixed herbs
- salt and pepper(optional)
- 1 tbsp olive oil
- 300 g chunky tomato salsa
- 60 g cheddar cheese, grated
Method
- Combine the chicken mince, egg, onion, mixed herbs and salt and pepper in bowl. Gently mix.
- Make small patties with Tbsps of the mixture.
- Heat oil and gently fry over medium heat for 3-4 minutes. Turn the patties and spoon a little salsa onto the top of each patty. Sprinkle with cheese. Cover and cook for a further 3-4 minutes until cooked/cheese melts.
Notes
Beef, pork or your preferred mince can be used in this recipe.
