Delicious shepherds pie, with extra 'paddock' or veggies – kids will still love it and get all the goodness!


Ingredients (serves 4)

  • 200g Beef mince
  • 1 onion, sliced
  • 1 garlic clove, minced
  • 1 tbs olive oil
  • 1 zucchini, diced
  • 1 carrot, diced
  • 1 broccoli head, chopped
  • 1 can of diced tomatoes (approx 400g)
  • 4 medium potatoes
  • 1 tbs butter
  • 1/4 C milk
  • optional cheese to sprinkle

Method

  1. Peel and chop the potatoes into smaller pieces. Cook in a small saucepan of vegetable stock until soft. Meanwhile, heat a large saucepan with oil. Cook the onion and garlic until soft, approximately 3 minutes. Add the mince and cook until browned.
  2. Add the zucchini and carrot and cook until soft. Approximately 5 minutes. Add the broccoli and tomatoes and allow to simmer for 10-15 minutes. Whilst simmering, drain the potatoes and mash with butter and milk.
  3. Pour mince mixture into a square baking dish, top with potato and run a fork over the top to texture. Sprinkle with optional cheese. Bake in the oven for 20 minutes, or until the top is golden brown.
