This is Miss Fusspots favourite way to eat rice paper rolls.

Ingredients (serves 1)

  • Rice paper
  • Lettuce or salad leaves
  • Carrot - grated
  • Cucumber - grated
  • Cheese - grated

Method

  1. Soak a sheet of rice paper in a bowl of water for about 30 seconds. Place on a damp tea towel.
  2. Add lettuce, carrot, cucumber and cheese along an edge of the paper.
  3. Fold the food edge over the ingredients until covered. Fold on each side. Roll up.
  4. Don't forget to add a frozen drink or ice brick to keep cool.

Notes

Swap and change the fillings to suit your kids.

  • I love rice paper rolls but i would also include vermicelli noodles as well as these go so great in rice paper rolls. You can pretty much add anything. I also like to add carrot and mint for something a bit different and bean shoots. They can be fiddly to make but so worth it when you munch into them.
