Fresh zingy flavor. and easy to prepare
Ingredients (serves 4)
- 4-5 Spring onions,chopped
- 2 cups chicken stock
- 1 can coconut milk
- 1 can coconut cream
- 2 limes juice and zest
- 2 Tablespoons Red thai curry paste
- 1 1/2 Tablespoons tomato puree
- 1 carrot, grated
- 1 zucchini ,grated
- bean shoots ( if desired)
- 1/2 cup fresh coriander, chopped
- Chilli flakes (optional)
Method
- Fry spring onions in a little oil until soft
- Add stock,coconut milk , coconut cream, lime juice, lime zest,thai curry paste and tomato puree. Simmer gently for 10 minutes
- Add grated carrot and zucchini , bean shoots and coriander
- Simmer until vegies just soft
Notes
This recipe is quick and easy but is a winner ! Fresh light flavors combine well. I have added shredded cooked chicken or prawn as well to mix it up a bit ! Serve with a sprinkle of chilli flakes if desired
