These are a great combination of naughty and nice
Ingredients (serves 4)
- 150g Fresh baby spinach leaves
- 100g Australian Feta cheese
- 1tsp Minced garlic
- 1tbs Butter
- 2 Shallots thinly sliced
- 2 Sheets puff pastry
- 1 Egg
- 1 Salt and pepper to season
Method
- Melt butter in a frypan and add shallots and garlic, fry briefly before adding spinach.
- Remove pan from heat and stir in feta, season and set aside to cool
- Cut your pastry sheets into four and place a dollop of mixture in the Center, fold the corners into the middle only slightly overlapping. Baste with egg completely and bake in a moderate over for approximately 10 minutes or until golden brown

Perfect as an entrée or tasty side, my son is particularly fond of these!
