Perfect steak cooked on non stick non toxic cast iron.

Ingredients (serves 2)

  • 1 good quality thick steak
  • 1 cast iron pan

Method

  1. Preheat your oven to at least 205 degrees C. Pat dry the steak with a paper towel then rub it all over with oil (use oil with a high smoke point, not olive oil) and sprinkle liberally with salt and pepper.
  2. Pre-heat your cast iron pan on the stove on medium heat. Get it smoking hot then drop in your steak and cook it for exactly 2 minutes before turning it over and cooking for two minutes on the other side. Then put the pan in the oven for a few minutes depending on how well done you like your steak.
  3. Carefully remove hot pan from oven using an oven mitt or towel, and transfer steak to another platter and let rest covered with aluminum foil.
