This Sugar Free Apple and Rhubarb Crumble is a healthy and delicious crumble recipe. Serve with low fat Greek yoghurt for bonus goodness.
Ingredients (serves 6)
- 1 bunch Rhubarb, chopped
- 4 large Apples, peeled cored and chopped
- 3/4 cup Rolled oats
- 1/2 cup Coconut
- 2 Tblsp Pure maple syrup
- 1 Tblsp Coconut oil
Method
- Peel and chop apples and rhubarb. Place in slow cooker. Cook on low til softened. Approx 2 hrs
- Melt coconut oil in frying pan. Add oats, coconut and maple syrup. Cook over medium heat til lightly browned, stirring constantly as it burns quick
- Place apple and rhubarb in bowls, sprinkle over oats mix. Sets hard after time
