For the little viking in your family this simple and quick toddler blini dinner is a great way to get some ‘brain food’ into your little one.

Ingredients (makes 6 blini)

  • Half a green apple, peeled and finely chopped
  • 1/4 cup Milk
  • 1/4 cup Wholemeal self raising flour
  • 1/4 cup Quick oats
  • 1 Egg
  • 50g Smoked salmon
  • 50g Cream cheese
  • 1 Knob of butter for frying

Method

  1. Combine the apple, milk, flour, oats and egg and stir well - should be like a cake mix consistency.
  2. Fry the blini batter - using a tablespoon, make small round pikelets - fry for 1-2 minutes on each side until golden.
  3. Top the blini with a smear of cream cheese and a piece of smoked salmon.

Notes

If you think your toddler will be like 'no way lady' about the smoked salmon - you can try smoked trout, it has a much milder taste.

  • This is an interesting idea and recipe – thanks.

  • smoked salmon pancakes sound delish. you could probably use buckwheat flour in this too.

  • Quick and easy! As you suggested though, an alternate fish to Salmon would be the go here.

  • So it’s kind of an apple cake with cheese ect as a topping. Hmmm, worth considering

  • I definitely would not use smoked salmon or other smoked food. The flavours are too strong and often taste very salty
