These fritters are an absolute hit in our house especially with my 9 month old. I can’t help but have a couple myself!


Ingredients (makes 12 Fritters)

  • 1 Mashed sweet potato
  • 1 Can of tuna
  • 1/4 cup Breadcrumbs
  • 1 Egg

Method

  1. Once you have boiled and mashed the sweet potato stir in the rest of the ingredients.
  2. Use a tablespoon and place small portions in a hot fry pan (oil optional).
  3. Serve whole or cut into strips for easy eating. These are a hit in our house!

Notes

You can also add some corn and spring onion. Serve with a dollop of sour cream.

  • Fritters were a regular on the menu as a kid and mum was always using up leftovers in them…especially roast meats.
