Tasty meatballs with a mild chilli flavour that kids love, served with a quick healthy coleslaw. The meatballs can be prepared ahead of time.
Replacing some of the sweet chilli sauce with hot sriracha sauce, adds a bit more Chilli hit for older kids & adults .


Ingredients (serves 4 | makes 12 meatballs)

  • 300 gms Inghams Diced Chicken Breast
  • 1 slice Bread (crust removed)
  • 2 Tbs Sweet Chilli Sauce
  • 1 Tbs Coriander
  • 1 cm Fresh Ginger (chopped)
  • 1/4 tsp Sesame Oil
  • 2 Spring Onions (Roughly chopped)
  • 1 pkt Coleslaw (packaged)
  • 4 Tbs Sweet Chilli Sauce
  • 4 Tbs Mayonnaise
  • 1/4 tsp Sesame Oil
  • 1 Lime (juice only)
  • 2 Tbs Toasted Sesame Seeds

Method

  1. Process the diced Inghams Chicken Breast, bread, 2 Tbs sweet chilli sauce, coriander, ginger, spring onions & 1/4 tsp of sesame oil, until minced.
  2. Roll into balls and chill while preparing the coleslaw.
  3. Combine the remaining sweet chilli sauce, sesame oil, mayonnaise & lime juice, mix well, toss through the coleslaw, just before serving.
  4. Heat a non-stick frypan, cook the meatballs over med heat, turning as needed until browned on all sides & cooked through.
  5. To serve, place meatballs on top of coleslaw, drizzle with a little sweet chilli sauce, sprinkle with sliced spring onion & toasted sesame seeds.

  • Yum… and I could actually cheat. Coles now sells a pre-packed type slaw similar to this so I could just add the dressing and chicken and… voila!
