Tasty meatballs with a mild chilli flavour that kids love, served with a quick healthy coleslaw. The meatballs can be prepared ahead of time.
Replacing some of the sweet chilli sauce with hot sriracha sauce, adds a bit more Chilli hit for older kids & adults .
Ingredients (serves 4 | makes 12 meatballs)
- 300 gms Inghams Diced Chicken Breast
- 1 slice Bread (crust removed)
- 2 Tbs Sweet Chilli Sauce
- 1 Tbs Coriander
- 1 cm Fresh Ginger (chopped)
- 1/4 tsp Sesame Oil
- 2 Spring Onions (Roughly chopped)
- 1 pkt Coleslaw (packaged)
- 4 Tbs Sweet Chilli Sauce
- 4 Tbs Mayonnaise
- 1/4 tsp Sesame Oil
- 1 Lime (juice only)
- 2 Tbs Toasted Sesame Seeds
Method
- Process the diced Inghams Chicken Breast, bread, 2 Tbs sweet chilli sauce, coriander, ginger, spring onions & 1/4 tsp of sesame oil, until minced.
- Roll into balls and chill while preparing the coleslaw.
- Combine the remaining sweet chilli sauce, sesame oil, mayonnaise & lime juice, mix well, toss through the coleslaw, just before serving.
- Heat a non-stick frypan, cook the meatballs over med heat, turning as needed until browned on all sides & cooked through.
- To serve, place meatballs on top of coleslaw, drizzle with a little sweet chilli sauce, sprinkle with sliced spring onion & toasted sesame seeds.
