The most moist and delicious choc chip muffins with zucchini and carrot for a veggie hit.
Ingredients (makes 14 Muffins)
- 1/2 cup Olive oil
- 1/2 cup Brown suger
- 2 Eggs
- 1 teaspoon Vanilla essence
- 2 cups Self raising flour
- 1/3 cup Cacao
- 1 cup Milk
- 1 medium Carrot
- 1 medium Zucchini
- 1 cup Choc chips
Method
- Preheat oven to 170 and line muffin tray
- Whisk suger and oil for 2 minutes
- Whisk in eggs and vanilla essence
- Whisk in milk
- Sift in flour and cacao and then combine
- Squeeze out juice of carrot and zucchini and then fold through followed by choc chips
- Spoon into muffin tray and bake 20 minutes for full size. 16 minutes for mini or until a knife is pulled out clean.
