yummy and a nice change from traditional salad. 🙂


Ingredients (serves 4)

  • 1/2 cup cous cous.
  • 1 cup mixed lettuce leaves
  • 1 pk marinated tofu
  • 1/4 cup diced capsicum
  • 1/2 cup chic peas
  • 1/4 diced red onion.
  • small hand full shallots
  • small tin Sweet corn
  • 5 Baby bocconcini cut in half

Method

  1. Make cous cous. Just cover with boiling water wait 10 min then gently seperate with fork.
  2. In a bowl. Add lettuce, cous cous, diced veg, corn, bocconcini and chic peas.
  3. Cut Tofu in to cubes then put in salad. Tip Any extra marinade from the Tofu over salad. Toss. Then serve.
