A healthy quick meal perfect for little (or big) people at any time of day!
Ingredients (serves 1)
- 2 Eggs
- 1/4 cup Grated cheese
- 1 Fresh tomato
- 1/2 cup Spinach leaves
- 1 Salt & pepper to season
- 1tsp Butter
Method
- Heat butter in a heavy bottomed saucepan, add eggs and tomato, stirring with a metal spoon.
- Add in spinach and season with salt & pepper, cook until eggs have formed and spinach has softened
- Add cheese and continue to stir through until fully cooked. Serve with fresh toast!
Notes
You can add a little milk to soften the eggs if you desire!
