A healthy quick meal perfect for little (or big) people at any time of day!


Ingredients (serves 1)

  • 2 Eggs
  • 1/4 cup Grated cheese
  • 1 Fresh tomato
  • 1/2 cup Spinach leaves
  • 1 Salt & pepper to season
  • 1tsp Butter

Method

  1. Heat butter in a heavy bottomed saucepan, add eggs and tomato, stirring with a metal spoon.
  2. Add in spinach and season with salt & pepper, cook until eggs have formed and spinach has softened
  3. Add cheese and continue to stir through until fully cooked. Serve with fresh toast!

Notes

You can add a little milk to soften the eggs if you desire!

  • And a bit of capsicum for more mature tastes.
